Dim Sum Lovers. This is better than restaurant cooking. Perfected way, Spicy, just mild. Phoenix Paws, aka chicken feet. Favorite among Oriental at dim sum house. Notice it takes lot of numerous steps in the making. But at the end, rewarded with nasty looking but delicious food. Also I will show you the secret, how to make it PUFF UP & tenderized tendons. 2 pounds chicken paws (aka chicken feet)
5 cups water (for boiling feet)
3 slices ginger
3 stalks green onions
1 Tbs. salt
2 Tbs. rice vinegar

as needed cooking oil
as needed ice and water (for soaking fried paws)

5 gloves garlic (smashed only)
2 star anise
2 Tbs. oyster sauce
2 Tbs. hot chili bean paste
