Stir-Fried Green Peppers and Pork
Serves 2

INGREDIENTS
200g thinly sliced pork shoulder loin
2 teaspoons potato starch (cornstarch)
10 shishito peppers
1 tablespoon sesame oil
A:
2 tablespoons sake
2 teaspoons sugar
1 tablespoon soy sauce
1 tablespoon gochujang (Korean red chili paste)
1 teaspoon grated garlic
1 teaspoon vinegar
Chopped green onions, for garnish

PREPARATION
1. Coat the thinly sliced pork shoulder loin with potato starch. Remove the stems from the shishito peppers and make small holes in them with a skewer to prevent bursting during cooking.
2. Heat sesame oil in a frying pan over medium heat. Add the coated pork slices and cook both sides until browned. Once the pork is cooked through, add the shishito peppers and stir-fry.
3. When the shishito peppers become tender, add the mixed A sauce and stir-fry over high heat.
4. Turn off the heat and sprinkle vinegar over the dish. Mix well. Serve the Stir-Fried Green Peppers and Pork in a dish, and garnish with chopped green onions.
