Stop using olive oil to roast your vegetables! this video tells a simple trick to make delicious oven roasted vegetables slightly healthier - by using avocado oil instead of olive oil. Olive oil and avocado oil are both heart healthy anti-inflammatory oils, however olive oil may begin to denature and thus lose its health benefits around 400 degrees. And wouldn't you know it, 400-425 degrees is a great temperature to roast vegetables in the oven. By comparison, avocado oil has a much higher smoke point so will not denature when roasting vegetables between 400-425 degrees.
