Stretchy Tofu
Servings: 2

INGREDIENTS
300g tofu (silken)
40g potato starch
1/3 teaspoon salt
Noodle soup base (aka mentsuyu), as needed
Chopped scallions, as needed
1 egg yolk

PREPARATION
1. Mix the tofu, potato starch, and salt in a pot.
2. Cook (1) on medium heat while stirring until sticky.
3. When (2) is sticky and shiny, transform into a tray lined with a food wrap. Cover the tray with a food wrap and chill in the refrigerator for 3 hours.
4. Cut (3) into bite-sized pieces. Serve with some noodle soup base. Add chopped scallions and the egg yolk on top.
5. Enjoy!
