Chicken Stir Fry Using The Velveting Technique
Ingredients For The Chicken Marinade
cup Rice wine vinegar
1 eggwhite
1 Tbsp. Corn starch
cup coconut aminos Teriyaki Flavor
Pinch of salt

Ingredients For Stir Fry Marinade:
cup Tamari or soy sauce
3 Tbsp. coconut aminos Teriyaki or regular flavor
cup chicken broth
1 tsp. Sesame oil
1 Tbsp. balsamic vinegar
3 Tbsp. ground ginger
5 cloves garlic, minced
1 tsp. Honey
1 Tbsp. cornstarch or arrowroot

Ingredients For Stir Fry:
1 lb. of chicken breast or thighs, trimmed of fat, sliced into inch thick pieces
1 lb of veggies, I used 1 lb.asparagus, 4 large carrots, and 1 onion, trimmed and sliced into bite size pieces.
1 - 2 Tbsp Avocado oil

The velveting technique is a process of coating a protein, in this case, chicken with cornstarch and a few other ingredients for at least 30 minutes. Then the protein is placed in hot water for just a minute or two. The chicken is then stir fried over hot heat. The cornstarch coating will seal in the juices and help the sauce adhere to the chicken. The result is chicken that is very tender and juicy with a wonderful mouth-feel.

Combine all of the ingredients for the chicken marinade in a medium size bowl. Whisk to combine. Add the sliced chicken, cover and place in the refrigerator for at least 30 minutes but an hour would be better.

Combine all of the stir fry marinade ingredients in a bowl and whisk that to combine. Set aside.

Slice all the veggies you will be using. You can use any veggies you like just group them according to how long they will take to blanch. The goal is to not cook the veggies all the way but are still a bit firm. If you wanted to use broccoli for example, group that with the carrots and cook that first. They would take maybe 2 to 3 minutes. Then move on to the next less dense veggie. Asparagus would go well with say zucchini. They will take 1 minutes.

If you want to use greens like chard, spinach, or kale, they might only take 30 seconds.
Boil a large pot of water to a rolling boil. Drop in the veggies for the approximate amount of time and then remove them to a strainer to drain. Do your second batch of veggies and repeat.

Once all the veggies are done, its time to do the chicken. Drop that into the boiling water for only 1 to 2 minutes. You want to only cook the chicken1 to 2 minutes. Remove the chicken to drain.

In a large frying pan or wok over high heat, add the avocado oil and then the onion, stir fry 2 to 3 minutes and then add the chicken. Stir fry that for 2 - 3 minutes and then add the stir fry marinade sauce. After 1 minute add the veggies and stir fry those for 2 to 3 minutes and thats it.

You can serve this with white rice, cauliflower rice or just by itself. Enjoy!
