(English Recipe)

Chicken Tempura
Servings: 2

INGREDIENTS
Oil, for frying
250 grams chicken breast, cubed
2 teaspoons soy sauce
1 teaspoon sake
1 teaspoon grated ginger
1 teaspoon grated garlic
Kosher salt, to taste
Pepper, to taste
1 large egg
30 grams cornstarch
30 grams all-purpose flour
60 milliliters cold water

For Serving
Shredded cabbage
Lemon

PREPARATION
1. Heat the oil in a large pan until it reaches 350F (180C).
2. In a medium bowl, combine the chicken, soy sauce, sake, grated ginger, grated garlic, salt and pepper. Mix well to coat.
3. In a separate medium bowl, beat the egg with the cornstarch, flour, and cold water until well combined.
4. Dip the seasoned chicken in the batter to coat.
5. Fry the chicken pieces in the hot oil until they are golden brown and float to the surface. Use a slotted spoon to transfer the chicken to a paper towel-lined plate to drain.
6. Serve with shredded cabbage and lemon wedges.
7. Enjoy!

Sweet Soy Chicken Wings
Servings: 2

INGREDIENTS
8 chicken wings
Kosher salt, to taste
Pepper, to taste
Potato starch, for coating
Oil, for frying

Sweet Soy Glaze
100 milliliters soy sauce
50 milliliters mirin
50 milliliters sake
50 grams sugar
1 clove garlic, grated

For Garnish
Toasted white sesame seeds

PREPARATION
1. Heat the oil in a large pot until it reaches 320F (160C).
2. Season the chicken wings with salt and pepper, then coat with potato starch.
3. Fry the wings in the hot oil for 7 minutes, then remove from the pan.
4. Increase the oil temperature to 350F (180C). Fry the wings again until golden brown, about 3 minutes. Drain on paper towels.
5. Make the glaze: In a small pan over medium heat, combine the soy sauce, mirin, sugar, sake, and garlic. Bring to a simmer and let reduce until thickened, 5 minutes. Add the wings and toss to coat.
6. Sprinkle the wings with toasted white sesame.
7. Enjoy!
