Fried Japanese Radish
Servings: 2

INGREDIENTS
300 grams Japanese radish
2 tablespoons soy sauce
teaspoon minced fresh ginger
teaspoon minced fresh garlic
Vegetable oil, for frying
3 tablespoons cornstarch
3 tablespoons flour
avocado, diced
1 tablespoon mayonnaise
1 teaspoon lemon juice
Kosher salt, to taste
Pepper, to taste

PREPARATION
Peel the radish, then cut into matchsticks about 3 inches long and inch thick.
In a medium bowl, combine the soy sauce, ginger, and garlic. Add the radish matchsticks and toss to coat, then marinate in the refrigerator for 10 minutes.
Heat the oil in a medium pan over medium heat until it reaches 340F (170C).
In shallow dish, combine the cornstarch and flour.
Add the radish matchsticks to the flour mixture and toss to coat.
Transfer the radish sticks to the hot oil, in batches if necessary, and fry for 2 minutes, until golden brown. Transfer to a paper towel-lined plate to drain.
In a small bowl, mash the avocado with a fork.
Add the mayonnaise, lemon juice, salt, and pepper, and stir to combine.
Serve the fried radish with the avocado sauce for dipping.
