Teriyaki Mushroom DONBURI
Servings: 1

INGREDIENTS
1 bowl steamed rice
2 eggs
1/2 pack Maitake mushrooms
1 tablespoon potato starch
1 tablespoon mayonnaise
1 tablespoon sesame oil
A
2 teaspoons mirin
1 teaspoon noodle soup base (aka Mentsuyu)
1 teaspoon soy sauce
1 teaspoon sugar
10g grated ginger
Red chili peppers (sliced), as needed

PREPARATION
1. Tear apart the mushrooms to small pieces. Dust them with potato starch.
2. Mix the eggs and mayonnaise in a heat-proof bowl. Microwave for 40 seconds at 600W. Mix well. Microwave again for another 40 seconds.
3. Heat the sesame oil in a pan on medium heat. Stir-fry the mushrooms (1) until nicely golden. Add all of the ingredients A into the pan and simmer. Add (2) into the pan and cook a bit. Put on the rice.
4. Enjoy!
