We all love the rich and savoury flavours of butter chicken the tender chicken pieces in a velvety smooth sauce bursting with the perfect balance of buttery goodness and aromatic spices. Served with a plate of fluffy white rice or freshly made naan? Yes, and YES.

Whats interesting about this dish is also the use of a common Indian herb called Kasuri Methi, which really does raise this dish to another, more authentic level.

We also think its why Zermatt couldnt stop eating it.. but well let you be the judge of that.

Ingredients (for 10-15pax):
Chicken marinade:
2.4kg Boneless chicken thigh
3 tbsp Lemon Juice
6 tbsp Chilli powder
3 tsp Salt
6 tbsp Yoghurt
3 tbsp Grated ginger
3 tbsp Grated garlic
6 tbsp Cooking oil

Gravy:
1.5kg Tomato
3 tbsp Garam masala
3 tbsp Chilli Powder
9 tbsp Sugar
3 tbsp Garlic
5 whole Onion (Diced)
1.5l Chicken stock
300g Butter
9 tbsp Cream
Salt to taste
3 tsp Kasuri Methi (dried fenugreek)
