when we say bhurji we think of eggs or panner, today I will show you how to make tofu bhurji in an easy healthy way.
You can eat it plain or with roti, jowar or bajra roti, however you like.
Tofu is good for weight watcher's people who are on diet or who do not love panner.
This is an easy and healthy way to give your taste bud a change.
minimal spice, quick recipe and tasty.

**INGREDIENT **

* 100 gms Tofu (crushed)
* few curry leaves
* 1 tbl spn ginger-garlic finely chopped
* 1/4 tspn fennel seed (sauf)
* 1/2 tbl spn cumin seed (jeera)
* 1/2 tbl spn turmeric pdr
* 1/2 tbl spn red Chile pdr
* 1/2 tbl spn sabji masala
* 1/2 tbl spn salt (as per taste)
* 1 medium size chopped onion
1 medium size chopped tomato

Method :-

* In a kadhai or deep sauce pan add 2 tbl spn oil
(you can use oil of Ur choice).
* Add few curry leaves, chopped ginger-garlic and saute for a min.
* Add jeera & sauf saute and add chopped onion and saute
till onion turns pinkish brown.
* Add tomato and saute till soft.
(add 1-2 tbl spn water if tomato's are not ripe)(optional)
* Now add all the spices and salt(as per Ur taste and requirement).
* Add crushed tofu and mix well.
* Serve with roti or any Indian bread of your choice.
