TOMATO SOUP WITH FINE BULGUR AND DRIED MINT FLAKES

In this episode I'd like to share with you one of our favourite soups recipe. It is so easy to make, yummy and nutritious. I prepare this tomato soup with fresh tomatoes in summers or use preserved tomato sauce in the winter.

INGREDIENTS
750 gr. (1.65 pounds) fresh tomatoes or 1 jar preserved tomatoes
3 cups water
3 tbsp fine bulgur
1 tsp dried mint flakes
1 tsp tomato paste
1 tbsp of each: olive oil and butter
1/2 tsp sweet paprika
1/2 tsp granulated sugar
Salt & black pepper

DIRECTIONS
If using preserved tomato sauce, just open the jar and
set aside until needed.
Rinse the fresh tomatoes.
Remove any green stems, grate or chop coarsely and place into bowl of a blender.
Pulse a several times, also do it in batches if needed.
You should have about 4 cups fresh tomato puree.
Heat butter and olive oil in a pan, over medium heat.
Add mint flakes and cook for about 1-2 minutes, stirring constantly.
Add the tomato paste and mix well.
Add sweet paprika, mix.
Add the tomato puree.
Season to taste.
Add 1/2 tsp sugar and mix.
Then add water and mix.
Totally optional but, mix with an immersion blender for 1-2 minutes for a smoother texture.
Bring to a boil.
Adjust seasoning then add bulgur and mix.
Reduce heat to medium low and simmer about 15 minutes, stirring occasionally.
Check bulgur for doneness then turn off the heat.
Let cool for a couple minutes then place in a serving dish.
Serve hot and enjoy.
