Vegetarian Stir-Fried Mee Tai Mak

This dish is as cool as it gets because it's completely free of alliums, meaning no garlic, onions, shallots, or scallions in sight.

Now, you might be thinking, "No garlic? How's that gonna taste?" With Khalils hack, using toasted, grated shiitake mushrooms. This substitution infuses the dish with a delightful pop of umami, complemented by additional umami boosters like soy sauce and more of that toasted, grated shiitake goodness.

No dish is complete without a medley of textures, we've added soybean sprouts and pea sprouts for a refreshing crunch, and shimeji mushrooms for an extra bit of chewiness. Known for its meaty texture, we've also included "tau kwa" for a protein-packed punch.

Ingredients:
2 tbsp Cooking oil
20g Ginger
300g Mee Tai Mak
2 tbsp Soy sauce
1 tsp Grated toasted Shitake Mushrooms
tsp Sugar
Salt and pepper, to taste

Vegetables:
1 tbsp Cooking oil
100g Dou Miao
150g Soybean sprouts
Sesame oil
White pepper
Salt
200g Shimeiji mushrooms
1 tbsp Soy sauce
tsp White pepper
100g Carrots

Cumin Tau Kwa:
2 tbsp Oil
1 Tau kwa
1 tbsp Soy sauce
1 tsp Cumin

Garnish:
Toasted peanuts
