Worm-like Jelly Drink - Cendol / Che Banh Lot / Lod Chong Helen's Recipes

Ingredients: For the jelly (pha bt bnh lt):
60g (1/2 cup) mung bean starch or water chestnust starch (60g bt u xanh / bt c nng)
2 tbsp sugar (2mc ng)
400ml (1 + 2/3 cup) water (400ml nc)
1/4 tsp pandan extract (1/4 mcf tinh l da)
a bowl of icing cold water with lots of ice cubes (1 t nc lnh nhiu )
For sugar syrup (nc ng):
1/2 cup brown/palm sugar (1/2 chn ng nu hoc ng tht nt)
1/4 cup water (1/4 chn nc)
pinch of salt (cht mui)

For coconut topping:
1/2 cup coconut milk (120ml nc ct da)
2 tbsp sugar (2mc ng)
1 tsp tapioca starch + 2 tbsp water (1 mcf bt nng ha vi 2mc nc)
pinch of salt (cht xu mui)
