Aren't these Bags of Happiness aka Stuffed Tofu in Scallop Sauce adorable? They are perfect for your Chinese New Year reunion dinner or even for your daily meals. So tasty and simple to make. You can delegate the stuffing step to your children to keep them occupied as well. :) Roland used some of the most basic ingredients to create this dish. The Cutest Bags of Happiness for CNY! Stuffed Tofu in Scallop Sauce Chinese Pork Recipe
Ingredients:
Serves 6 -8 pax
-------
15 - 16 spring onion leaves

Tofu filling
=====
150g (5.29oz) prawns
150g (5.29oz) minced pork (can be replaced with minced chicken)
40g (1.41oz) diced carrots
4 Chinese dried mushrooms (rehydrated & diced)
1 tablespoon oyster sauce
1 tablespoon Chinese white rice wine
A few dashes of grounded white pepper
1.5 tablespoons cornflour

Other ingredients
=====
10 tofu puffs (weighing approx. 150g or 5.29oz in total)
5g (0.18oz) young ginger
15g dried scallops (soaked in 350ml or 11.83 fl oz of water for 15 - 20 mins, use your fingers to shred them up)
Scallop water (as above)
1 tablespoon oyster sauce
Some cornstarch solution

Note: do add in a little more water if you want your dish to have more sauce. Give the sauce a taste and add more seasoning if required.
