For those who enjoy fish, this is a simple, healthy, light recipe and a real keeper, like so many other simple Greek Recipes.
Cod is the kind of white fish with a relatively mild taste. Combining it with fresh wild spinach and herbs and baking them together in the oven, makes for a great combo and a beautifully easy dish that will be enjoyed by the whole family.
Follow my instructions and your dinner is set!

INGREDIENTS:
750 gr. / 1 lb 10 oz Fresh Cod Filets
500 gr. / 1 lb 2 oz Fresh, wild Spinach, washed and strained
1 medium Onion, finely chopped
1 Leek, finely chopped
2 Spring Onions, finely chopped
6 tbsp. / 90 ml Olive Oil
1 tbsp. / 15 ml Tomato Paste (puree)
Ground Salt and
Ground Pepper, multi colored
