You have probably noticed my family's "weakness" for Galaktoboureko, hence the variety of recipes I have posted.
It is considered the epitome of divine Greek desserts, made with semolina custard covered all around with pastry. If you are wondering about the etymology of the word, it means exactly that: Gala + boureki i.e. a milk cream wrapped and twisted.
This easy to follow version-inspired by nature, is using Kataifi pastry molded like small nests, filled with the same delectable custard, baked in the oven and served hot with a clear, sweet lemony syrup.
Crispy, crunchy, warm and in equal portions for all your guests, what about that!
Let me show you how to create these charming nests.
Suitable for lacto-ovo vegetarians.

INGREDIENTS
Ingredients for the Custard Filling:
500 ml / 2 cups fresh Milk, half-full (2% fat)
75 gr. / 2.65 oz / about 0.5 cup fine Semolina
100 gr. / 3.5 oz / 0.45 cup Sugar
2 large Eggs at room temp.
25 gr. / 1 oz Butter
8 gr. / 0.28 oz / 0.5 tbsp. Vanilla sugar
Pinch of Salt
Ingredients for the Kataifi base:
250 gr. / 9 oz Kataifi-Kadaifi Pastry (half package)
1/3 cup / 80 gr. / 2.8 oz Butter, melted
A tin with 12 muffin cases

Ingredients for the Syrup:
1.2 cups / 275 gr. / 9.7 oz Sugar
3/4 cup / 187.5 ml Water
1 Cinnamon stick
1 tsp. Lemon juice
1 pc. Lemon rind
To sprinkle on top: ground Cinnamon and optional to garnish: Powder Sugar
