This Salad combines fresh Lettuce, light Anthotyro cheese, a lush, zesty vinaigrette sauce and as special garnishing the unique Kritamo (wild, rock samphire/seafennel) and grilled, crunchy Koulouri (sesame bread ring).
It makes a nutritious lunch with a distinctive taste combo! What do you say? Would you like to try it?
Suitable for lacto-vegetarians. For fasting and Vegans, please substitute Anthotyro cheese with a vegan alternative.

INGREDIENTS
Ingredients for the grilled Koulouri:
1 Koulouri Thessaloniki (sesame bread ring), fresh or frozen
About 30 ml / 1-2 tbsp. Extra Virgin Olive Oil
Ground Salt and Pepper

Ingredients for the Vinaigrette:
60 ml / 4 tbsp. extra virgin Olive Oil (EVOO)
30 ml / 2 tbsp. Balsamic Vinegar
7.5 ml / 0.5 tbsp. Yellow Mustard
Ground Salt and Pepper

Ingredients for the Salad:
100 gr. / 3.5 oz fresh Lettuce, washed and cut in thick slices
80 gr. / 2.8 oz Fresh Anthotyro Cheese (or Myzithra or Cottage Cheese)
3 tbsp. Brined, wild Rock Samphire aka Kritamos
8 Small Tomatoes, halved (or 4 medium tomatoes cut in 8ths)
3 tbsp. fresh Parsley, finely chopped
3 tbsp. fresh Dill, finely chopped
1 tbsp. fresh Mint, finely chopped
1 tbsp. fresh Basil, finely chopped
6-8 Kalamata Olives
Ground Salt and Pepper
