Everyone loves a good Greek Saganaki and there are so many varieties to create easily at home.
This time, similar to my Okra Saganaki recipe, I made it using green peppers.
They are placed in an oven dish, bathed in a lush tomato sauce and plenty of feta cheese and then baked slowly in the oven which does all the work.
A super easy, low cost recipe to create during early Summer and Autumn months when green peppers are tender and fragrant.
Suitable for lacto-vegetarians.

INGREDIENTS:
400 gr. / 14 oz Small Green Peppers, whole, sweet or mildly spicy, washed (e.g: Spanish Padrn, Herbn or shishito)
150-200 gr. / 5.5-7 oz Greek Feta Cheese
200 gr. / 7 oz Mini Grape Tomatoes, washed
400 gr. / 14 oz Crushed tomatoes, canned
2 Garlic cloves, minced
3 tbsp. / 45 ml Olive oil
15 ml / 1 tbsp. red wine Vinegar
1 tsp. dry Thyme
To garnish: 2 tbsp. fresh Parsley, finely chopped
Ground black Pepper -NO SALT-feta is salty enough!!
