Serves 3-4 persons
Sardines are the most common and beloved fish, enjoyed in all Mediterranean countries incl. Greece from ancient times. It is also one of the most nutritious, loaded with Omega-3 fatty acids, calcium, phosphorous, iron and folic acid.
All sardine recipes are quite simple; the only secret is to find fresh sardines AND prepare them the same day.
In this recipe, I bake my sardine filets in a spicy tomato sauce with onion, garlic, chili peppers and paprika for a very appetizing effect.
In Greek, we call this dish "Sardeles pantremenes" i.e. married because they are combined with this special sauce!

INGREDIENTS:
500 gr / 1 lb 1.8 oz Sardines filets (about 15 whole sardines, 30 filets)
1/2 Onion, coarsely chopped
1 large Garlic clove, minced
400 gr / 14.1 oz Tin Tomatoes, sliced
1 tbsp. Tomato Paste (puree)
5-6 Chili Green Peppers, pickled (depending on how spicy you like it)
1/2 bunch fresh Parsley, finely chopped
3.5 tbsp / 50 ml Olive Oil
1 tsp. Sugar
1 tsp. Chili Flakes aka Boukovo or Paprika powder
Ground Salt and Pepper
