Fricassee is a French word used also in Greek cuisine, describing a stew of meat slices with green vegetables, served in a white lemon sauce. Traditionally, the most common Greek fricassee recipe is with lamb.
This one is a fairly easy one-pot dish using beef (lighter in taste), prepared quickly in a pressure cooker and served with the famous Greek Avgolemono sauce (egg-lemon sauce).
Although you may argue that it is not the prettiest looking dish, you will definitely agree that its a wonderful "marriage" of tastes.
A wintery, moreish dish indeed!

INGREDIENTS:
Ingredients for the meat and greens:
650 gr. / 1 lb 7 oz Beef-Shoulder steaks, deboned, cut in large slices
400 gr. / 14 oz Lettuce, washed, coarsely chopped
400 gr. / 14 oz fresh Spinach, washed
1 medium Onion, finely chopped
3-4 Fresh Spring Onions, chopped in thin rounds
1 bunch fresh Dill, finely chopped
Ground Salt and Pepper
1/3 cup / 80 ml Olive Oil
500 ml /2 cups warm Water with 1 dissolved Beef Stock Cube

Ingredients for the Avgolemono (egg-lemon) Sauce:
1 large Egg
Juice from 1 & 1/2 Lemon, about 60 ml
Lemon for garnishing
