Serves 3-4 persons
Bruschetta is an antipasto (starter dish) from Italy, consisting of grilled bread rubbed with garlic and topped with olive oil and salt and a variety of other toppings.
My recipe goes one step further by making fresh, homemade bread on a bread machine, using it to make Bruschetta like a Pizza, with Greek olive oil, fresh Greek tomatoes and feta cheese for a perfect, crunchy lunch or snack/finger food!
Woohoo!! Enjoy them this summer with cold beer !
Suitable for vegetarians.

INGREDIENTS:
Ingredients for the Bread base:
5.4 cups / 670 gr / 1 lb 7.8 oz All-purpose Flour
30 gr / 1 oz Butter
5 gr / 0.17 oz / 1.1 tsp. Sugar
8 gr / 0.28 oz / 2.7 tsp. Salt
7 gr / 0.25 oz / 2 tsp. dry Yeast
1.6 cups / 400 ml lukewarm Water
Ingredients for the Pizza topping:
400 gr / 14 oz / 2 ripe, large Tomatoes or 4 medium Tomatoes (pommodori)
37 ml / 2.5 tbsp. Tomato Paste (puree)
150 gr / 5.5 oz Feta cheese
50-60 gr / 1.75-2.1 oz Gouda cheese, grated
30 ml / 2 tbsp. extra Virgin Olive oil (EVOO)
30 gr / 1 oz / 7 -8 Kalamata Olives, pitted, cut in fourths
22.5 ml / 1.5 tbsp. Olive Paste i.e. Tapenade (for 1 pizza)
1 tsp. dry Oregano
Ground Pepper and Optional: A bit of Salt
