Butter Sautéed Spinach and Egg | Umami Insider

Ingredients:
- ¼ bunch Spinach
- 2 Egg
- 1 tsp Mirin
- 2 tsp Water
- 1 tsp Vegetable Oil
- ½ Tbsp Butter
- 1 tsp Soy Sauce

Instructions:
1. Cut the spinach into about 1 inch lengths.
2. Whisk the eggs with chopsticks, and mix in the mirin and water.
3. Heat vegetable oil in a small pan and melt butter over medium heat.
4. Add spinach and quickly stir fry the spinach. Reduce heat to low.
5. Pour in the eggs and mix until the eggs are half-raw.
6. Pour in soy sauce in a circular motion and continue cooking until eggs are done.
