Literally meaning dipping sauce for noodles, mentsuyu is a soy-based, umami-packed sauce enjoyed with Japanese noodles such as udon, soba, and somen. Made by a long-standing brewing company, Moribun, this Mentsuyu (Concentrated All-Purpose Noodle Soup Base) capitalizes on the umami from the company’s signature soy sauce and also from carefully selected ingredients, featuring bonito from Kagoshima, shiitake mushrooms from Ehime, kombu kelp from Hokkaido, and sardines from the Seto Inland Sea. When you use it as a dipping sauce for noodles, it’s best to dilute it one-to-one with water, but you can adjust its flavor intensity by changing this ratio to taste.
