Candied Donuts
Servings: 6 donuts

INGREDIENTS
Donut Dough
150g bread flour
50g flour
1 tablespoon sugar
1/4 teaspoon salt
3g dry yeast
1 egg
90cc milk
20g butter

Custard, as needed

Caramel
50g sugar

PREPARATION
1. Mix and knead all of the ingredients for donut dough in a bowl. Cover the bowl with a food wrap and let the dough rise at 30C (86F) for 40 minutes. When doubled in size, punch down the dough. Divide the dough into 6 equal parts and round them. Place them on a parchment paper and let them rise at 30C (86F) for 20 minutes (the second rise).

2. Heat the vegetable oil to 160C (320F) in a pan. Deep fry (1) until golden.

3. Poke a hole in the side of each donut and pipe the custard into it.

4. Heat the sugar in a frying pan until browned. Dip each donut to coat with the caramelized sugar.

5. Enjoy!
