Mix and knead all of the ingredients for donut dough in a bowl. Cover the bowl with a food wrap and let the dough rise at 30C (86F) for 40 minutes. When doubled in size, punch down the dough. Divide the dough into 6 equal parts and round them. Place them on a parchment paper and let them rise at 30C (86F) for 20 minutes (the second rise).2. Heat the vegetable oil to 160C (320F) in a pan. Deep fry (1) until golden.3. Poke a hole in the side of each donut and pipe the custard into it.4. Heat the sugar in a frying pan until browned. Dip each donut to coat with the caramelized sugar.5.
