Candied Sweet Potato - Daigaku Imo - Cooking Japanese

Japanese candied sweet potatoes are a wonderful treat anytime of year but especially in the fall when the sweet potato in in season. The crunchy outer shell is glazed in a wonderful candy coating. Inside you will find an almost creamy texture. It is topped off with a sprinkle of black sesame seeds.

In Japan we call this dish daigaku imo which translates literally into "university potato." The strange meaning refers to the dish being popular at Tokyo universities in the early 1900's. Daigaku imo has since become popular all over Japan as a dessert, a side dish, or a street snack.
