Traditionally, the most common Greek fricassee recipe is with lamb.This is a fairly easy, unusual Lenten fricassee, combining chickpeas and Swiss chard. They are cooked in the stove, together with spring onions and leeks in a rich lemony sauce (instead of the usual egg-lemon sauce). The dish comes from my paternal island of Tinos in the Cyclades complex in the Aegean Sea. An island, very close to my heart, prepares this fantastic, healthy meal with the delicious tastes of all the fresh vegetables.
