Chinese Recipe: Spicy Chicken Hot Pot / /

We love hot pot. We love it even more when we use Spicy Chicken Hot Pot as the base for our steamboat. Maybe next time you can consider making this as a base for your steamboat/hot pot party instead of the usual chicken soup base? As always, when your gravy/soup for this dish is finished, you can top up the spicy chicken hot pot with normal chicken soup - like you would with a normal hot pot.

Ingredients
Serves 4 pax

Marinating the chicken
=====
1 whole chicken
2 tablespoons of oyster sauce
2 tablespoons of light soy sauce
4 tablespoons of dark soy sauce
2 tablespoons of Huatiao cooking wine

Chilli base
=====
2 tablespoons of sesame oil
2 teaspoons of sichuan peppercorn
1 thumb size of sliced ginger
12 cloves of garlic
6 pieces of chilli padi
150 - 200g hydated dried chilli
2 tablespoons of spicy broadbean paste
2 whole onions - sliced
6 cups of water
1 green pepper
2 stalks of celery
6 dried mushrooms - hydrated
1 tablespoon of sugar
1/2 teaspoon of salt or to your preference
