Claypot Herbal Duck w/ Mushrooms Super Easy Chinese Food Recipe

On the eve of Lunar New Year, we Chinese usually have reunion dinner with our family as symbolic gesture of giving thanks for the year that has passed as well as to celebrate the coming of a brand new year. However, unlike our usual family dinners, we will prepare more complicated & luxurious food as part of the celebration. Our Stewed Duck with Mushrooms is an excellent dish to be added on your reunion dinner menu.

Ingredients:
Serves 6

Marinating & baking the duck
=====
Marinating time: 20 minutes
Baking time: 180 degree celsius for 30 minutes

1/2 a duck
1 tablespoon of Chinese rice wine
0.5 teaspoon of five spice powder
1 tablespoon of low sodium light soya sauce


Ingredients for the gravy
=====
Total stewing time: 1 hour & 30 minutes

Some cooking oil
1 whole bulb of garlic with skin intact
1 thumb size ginger - smashed
2 pieces of star anise
6 pieces of clove
6 - 8 pieces of large Chinese mushrooms - cut into halves
Add marinated & baked duck
1 litre of liquid which you used to soak the mushrooms
3 pieces of licorice
2 pieces of bay leaves
2 tablespoons of oyster sauce
0.5 cup of Huiji waist tonic (can be replaced with 2 - 3 pieces of Angelica roots)
1 whole carrot - cut into 1.5 cm size pieces
100 g of Shimeiji mushrooms
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao wine)
2 tablespoons of low sodium light soya sauce
0.5 teaspoons of sugar
Some broccoli - blanched
