Coleslaw also known as cole slaw, is a famous salad consisting primarily of finely-shredded raw cabbage with a salad dressing, which could be either vinaigrette or mayonnaise. The salad is also well known and much desired in Greece!
This is NOT the authentic recipe. Instead it's my very own, interesting variation for a Coleslaw salad (hence the title).
Coleslaw is a must in my home for a good reason.... I make a "killer Coleslaw" and nobody will stop eating until it's finished! It's practically never enough!
Curious to know why you should try it? Its because I have added corn to make the Salad sweet and sour, crunchier and juicier and I also make a lighter lemony dressing.
This Salad which is the absolute favorite in my home, hopefully will become a favorite in your home too!
Suitable for vegetarians. For fasting or Vegans, just replace Mayonnaise with vegan substitute.

INGREDIENTS
Ingredients for the dressing:
4-5 tbsp. / 60-75 ml Mayonnaise, homemade or store-bought (either normal or light)
2 tbsp. / 30 ml Extra Virgin Olive Oil
2 tsp. / 10 ml Yellow Mustard
1 tbsp. / 15 ml fresh Lemon juice
Ground Salt and Black Pepper
2 tbsp. / 30 ml Water - if sauce is too thick

Ingredients for the Salad:
200 gr. / 7 oz finely chopped or shredded Cabbage (white, Green, Purple or a mix)
70 gr. / 2.5 oz finely grated Carrots (julienne)
100 gr. / 3.5 oz kernels of Sweet corn, canned
