Serves 4 persons
Osso Buco Soup is a hearty, delectable winter Soup. The Italian meat name Osso Buco or Ossobuco is translated as bone with a hole, referring to the marrow hole at the centre of the cross-cut veal shank.
What makes this soup different to others is that, by retaining and boiling the bone and the marrow, extra rich flavor is added to the soup.
A comfort soup for those very cold, snowy days. The perfect warm-me up dish!

INGREDIENTS:
Ingredients for the soup:
1 kg / 2.25 lb / 2 large, thick pieces cross-cut Veal shanks i.e. Osso Buco
400 gr / 14 oz / 3 Potatoes, cubed, suitable for boiling
150 gr / 5.5 oz small Carrots, cut in rounds
100 gr / 3.5 oz Celery sticks, cut in slices
1 bunch Celery leaves, chopped
200 gr / 7 oz Leek, finely chopped
1 large Onion, roughly chopped
2 Bay leaves
3 tbsp. / 45 ml Olive Oil
About 1.8 lt / 7 cups boiling Water
Ground Salt and Pepper
Optional: 1 cube Beef stock
Ingredients for the avgolemono (Egg-lemon) sauce:
2 Lemons + 1 for garnishing
2 large Eggs at room temp.
