Greeks love having a meze platter during those warm Summer nights to snack with ouzo on the rocks. I have posted in the past so many ideas on how to have your own veranda party nibbling these delicious treats.
The recipe I show you today is more uncommon, using crunchy Carob toasted breads (rusks) which are very trendy in Greece at the moment. They are deliciously covered with caper leaves, a mixture of freshly chopped tomatoes and onions coated with EVOO and they are garnished with cured, marinated anchovies on top.
Try this meze combining all the tastes of the Greek soil and sea and I promise you will be hooked!

INGREDIENTS:
5 handmade Cretan Carob Toasts-Rusks (altern: Toasted dark brown Bread)
200 gr / 7 oz / 2 medium, ripe Tomatoes, chopped in small cubes
1 small Onion, sweet variety, chopped in small cubes
Caper leaves, pickled
20 pcs. / 1 tbsp. Capers, small
2 tbsp. / 30 ml Extra Virgin Olive Oil (EVOO)
1 tbsp. / 15 ml red wine Vinegar
1/2 tsp. Garlic Powder
5 double filets cured, marinated Anchovies
1 tbsp. fresh Dill or Parsley, finely chopped
Optional: 5 black, pitted Olives, finely chopped
A pinch of Salt
Ground Pepper
