Serves 5-6 persons
Pumpkin is undoubtedly the Queen of Autumn! Hey, are you carving a pumpkin to make a Jack-o-Lantern for Halloween ? Then goodness me, dont throw away its pulp or seeds.
First of all, seeds can be roasted; and with the pulp you can make my easy to follow one-pot recipe for a delicious, perfect for this time of year, velvety Pumpkin and Butternut Squash Soup with a Greek touch!!
A comfort, healthy dish, ideal for the chilly autumn months, when there is an abundance of pumpkins and flu season is knocking on our door. Kids also love this soup for its velvety texture.
Suitable for vegetarians.

INGREDIENTS:
The Pumpkins:
400 gr/ 14 oz Fresh Pumpkin, weighed clean
350 gr / 12 oz Fresh Butternut squash, weighed clean
Other Ingredients for the Soup:
250 gr / 9 oz Carrots, cut in sticks
1 large Onion, cut in slices
650 ml /about 2.6 cups Water
45 ml / 3 tbsp. Olive Oil
1 pinch freshly ground Nutmeg
2/3 tsp. ground Cinnamon
1 tsp. dry Thyme
Ground Salt and Pepper
0.7 cup/ 175 ml/ 200 gr/ 7 oz Greek Strained Yoghurt, 0% fat
200 ml / 0.8 cup Single cream
Optional to garnish:
2/3 tsp. ground Turmeric
