I rarely prepare a cake without mixer or butter. However, I did try this recipe, as I wanted to see if it would succeed without the usual lots of mixer beating and butter fluffing.
I can honestly say that this cake was very easy to prepare, fragrant from the apples and spices, moist and very fluffy with a crispy crust that I didn't expect.
All in all, a really easy Autumnal and Winter dessert.
Wouldn't you like to know how to prepare it as well?
Suitable for lacto-ovo vegetarians.

INGREDIENTS
Ingredients for the apple filling:
1 kg. / 2.25 lb / 5 red, sweet Apples (e.g. Pink Lady, Fiji or other), washed
0.3 cup / 60 gr. / 2.1 oz Light Brown Sugar
1 tbsp. ground Cinnamon
1/3 tsp. ground Cloves
About 2/3 cup / 80 gr. / 2.8 oz Walnuts, finely chopped
Optional: 50 gr. / 1.75 oz Raisins

Ingredients for the Cake batter:
3.2 cups / 400 gr. / 14 oz Self-rising Flour, sifted
3 large or 4 medium Eggs @room temp.
1.75 cups / 400 gr. / 14 oz Sugar, white
0.7 cup / 180 ml Olive Oil, light
1/3 cup / 60 ml fresh Orange Juice
1.4 tbsp. / 20 ml Brandy (or extra orange juice)
1 tsp. Salt
Optional Decoration: Icing (powder) Sugar
