Eggplant Kabayaki
Servings: 2

INGREDIENTS
4 eggplant
3 tablespoons sake
3 tablespoons mirin
2 tablespoons sugar
3 tablespoons soy sauce
2 bowls steamed rice
Japanese sansho, as needed

PREPARATION
1. Peel the eggplant, put them in the heat-proof container, and cover with food wrap. Microwave for 3 minutes and 30 seconds at 600W.
2. Cut the eggplant slightly. With the back of the knife, open and flatten the eggplant.
3. Cook sake and mirin in a pan. Simmer to vape alcohol.
4. Add sugar and soy sauce into the pan (3) and simmer. Place the eggplant (2) and cook for 3 minutes on low.
5. Place the eggplant (4) over the rice. Sprinkle Japanese sansho on top.
6. Enjoy!
