Makes 10 Rolls
This is my very own creation for spicy Eggplant Rolls! A special appetizer where Eggplants are perfectly grilled, marinated in a rich garlic and vinegar sauce. They are then spread with the renowned spicy Feta and Pepper dip aka Tyrokafteri. To finish, they are rolled up and beautifully garnished with marinated greens for a stunning, cold meze.
Very appetizing, perfect to accompany ouzo or beer on a summer evening with friends!!

Note: You can prepare them 2-3 days ahead of serving.

INGREDIENTS:
Ingredients for the grilled Eggplants:
About 600 gr / 1 lb 5.5 oz / 2 large Bell Eggplants (aubergines)
30 ml / 2 tbsp. Olive Oil
15 ml / 1 tbsp. Balsamic Vinegar
1 Garlic Clove
Ground Salt and Pepper
10 large, thick toothpicks
Ingredients for the Tyrokafteri:
150 gr / 5.5 oz Soft Feta Cheese
25 gr / 1 oz. Sweet Roasted Florina Pepper
2-3 Hot Chili Peppers pickled
50 gr / 1.75 oz Greek Strained Yoghurt 2% Fat
30 ml / 2 tbsp. Olive Oil
15 ml / 1 tbsp. white Vinegar
1/2 Garlic Clove
Optional: 1/2 tsp. Paprika or ground pepper
Ingredients for the garnishing:
1-2 Carrots
Red Pepper (capsicum)
1/3 Cucumber, only the peel
30 ml / 2 tbsp. Olive Oil
15 ml / 1 tbsp. Balsamic Vinegar
