Zymaropita is a renowned crustless pie, from the Epirus prefecture. In the older days, there was not ready made Phyllo or other pastry available. Due to lack of time, house wives in Epirus made this pie without crust (pastry).
A Pie similar to Batsaria (hortopita i.e. made with wild greens) but prepared only with various cheeses, it is quick and easy to prepare, inexpensive and with humble ingredients that you usually have at home, but sooo delicious!
Let's prepare it together.
Suitable for lacto-ovo vegetarians.

INGREDIENTS:
Fluid Ingredients:
2 large Eggs
0.4 cup / 100 gr. / 3.5 oz Greek, strained Yoghurt, 5% fat
2/3 cup / 160 ml Fresh Milk, full fat
3.3 tbsp. / 50 ml Olive Oil, light

Solid (dry) ingredients:
2 cups / 250 gr. / 9 oz Self-rising Flour, sifted
125 gr. / 4.4 oz Feta cheese, crumbled
125 gr. / 4.4 oz Grated Cheeses, half Kefalotyri cheese (altern: Peccorino), half Gouda cheese
A pinch of Salt
Ground Pepper
Optional: 1 tsp. dried Mint
To garnish: About 3 tbsp. / 30 gr. / 1 oz Sesame Seeds
