Eryngii-meatballs with cheese
Servings: 10 balls

INGREDIENTS
150g chicken breast
Some salt and pepper
50g eryngii mushroom
1 teaspoon grated ginger
1 teaspoon consomm powder
1 tablespoon potato starch
2 cheese slices (cut each slice into 5 pieces)

Some all purpose flour
1 egg (beaten)
4 slices bread (crust only)
Some oil

PREPARATION
1. Cut chicken breast into small pieces, then mince with a knife. Cut eryngii mushroom and bread crust into small dice.
2. Knead minced chicken in a bowl. Season with salt and pepper. Add eryngii pieces, grated ginger, and potato starch. Mix well.
3. Shape chicken mixture (2) into bite-size balls. Put cheese into the center of each ball and seal it inside.
4. Dredge each ball in all purpose flour, dip in beaten egg, then coat with bread crust pieces. Heat oil in a pan to 170 (335F) and place balls. Deep fry until golden.
