Serves 7-8 persons
I prepared this celebratory lamb dish for my familys New Years Eve celebrations!
If you are a lamb meat lover, this recipe will definitely delight you!!
The lamb is infused with an aromatic marinade, enhanced with thyme, oregano and lemon. It's roasted slowly, wrapped in parchment paper together with the vegetables.
The marinade and the slow cooking are really important to achieve scrumptious, fork tender meat!
Of course, it can be consumed any time of the year at any celebration, also for your Easter table or just a Sunday family meal, which is still quite special!
Lets find out how to prepare it!

INGREDIENTS:
Ingredients for the marinade ( lamb and veggies):
1 bunch fresh Thyme
1 bunch fresh Oregano
4 tbsp. / 60 ml Olive Oil
cup / 125 ml fresh Lemon Juice (from 4 lemons)
1 Lemon cut in quarters
2 tsp. dry Thyme
2 tsp. Dry Oregano
1 large Garlic Clove, minced
Ground Salt and Pepper
Ingredients for the Roast:
2.5 kg / 5.5 lbs Lamb's Leg (with bone)
1.5 kg / 3 lb 5 oz Potatoes, suitable for baking
300 gr / 10.5 oz Carrots
250-300 gr / 9-10.5 oz Parsnip
6 - 8 Garlic Cloves
250 ml / 1 cup Water
3-4 tbsp. / 45-60 ml Olive Oil
Ground Salt and Pepper
