Filipino-style Eggplant Omelette
Serves 2

INGREDIENTS
2 eggplants
1 egg (A)
2 teaspoons salt (A)
1 teaspoon black pepper (A)
2 tablespoons vegetable oil

PREPARATION
1. Peel the eggplants, leaving the stem intact. Wrap them loosely in plastic wrap and microwave on 600W for 3 minutes.
2. Use a fork to flatten and spread one side of the eggplants. Dip the flattened eggplants into the mixture of A, which was combined in a bowl or tray similar to the volume of French toast.
3. Heat vegetable oil in a frying pan over medium heat. Place the dipped eggplants in the pan. Cook each side for about 2 minutes until they are well cooked.
4. Enjoy!
