Tenderly steamed fish all cooked in just one bag (psst, minimal cleaning) Follow nutritionist @thecharlottemei on Instagram for more easy, nutrition-packed meals.#themeatmensg #easyrecipe #fishrecipe Ingredients:2x barramundi fillets (~150g ea)2 stalks coriander, chopped20 kalamata olives, pitted, chopped finely 12-15 capers onion, chopped tomato, chopped1 tbsp extra-virgin olive oil2 tbsp lemon juiceSalt and pepperSteps:1. Preheat the oven to 180C.2. In a heated pan, saute the onions with some oil until softened and fragrant.3. Season the fish on both sides with salt and pepper, and place each fillet on a sheet of baking paper. 4. On each fillet, spread half the amount of chopped olives, and scatter the half the amount of tomatoes, capers, softened onions, and coriander.5. Drizzle half the olive oil and lemon juice over the fish, and repeat for the other.6. Fold up the baking paper, crimping the edges tightly, and bake in the oven for 15-20min, or until cooked. The time will vary depending on the thickness of your fish. Remember to check for doneness by poking through the thickest part of the fish. 7.
