Fried Chicken with Leek sauce

Servings: 2

INGREDIENTS
Fried chicken
1 chicken breast
1 teaspoon salt
1 ginger (grated)
1 clove garlic (grated)
1 teaspoon chicken stock powder
1/2 tablespoon sake

1 beaten egg
20g rice flour
40g potato starch
Some vegetable oil

Leek sauce
1 Japanese leek
1/2 teaspoon salt
Some pepper
1/2 lemon juice
1 tablespoon olive oil

PREPARATION
1. Remove skin and excess fat from the chicken breast and cut into bite-size pieces. Mix salt, grated ginger & garlic, chicken stock powder, and sake in a plastic bag. Put chicken pieces in the bag and marinate for 30 minutes.

2. Combine rice flour and potato starch.

3. Dip chicken pieces in beaten egg, then coat with rice flour mixture (2).

4. Heat 1cm of oil to 180C (356F) in a pan, place flour coated chicken. Deep-fry until golden.

5. To make leek sauce, mince the white part of Japanese leek.

6. Season with salt n pepper. Add lemon juice and olive oil.

7. Serve the fried chicken with leek sauce.
