There are some fish restaurants in Greece that I can't wait to visit again and again, as they serve this amazing meze.
In my own kitchen, I always wondered how they manage to fry crayfish and make it so crispy and appetizing. After some experimentation and adapting my recipe for fried crispy small calamari, I was able to succeed and share this recipe with you.
Of course, preparing them at home doesn't compare with savoring them a romantic summer evening by the Aegean Sea, accompanied with cold beer or ouzo.
Transport yourself mentally there by trying my crispy beauties, with those small tips to make them deliciously crunchy!
Suitable for fasting.

INGREDIENTS
Ingredients for the Thousand Island Sauce:
2/5 cup / 100 ml Mayonnaise light (or vegan/fasting substitute)
1/5 cup / 50 ml Ketchup
1 tbsp. / 15 ml Mustard, mild, yellow
1 tsp. red wine Vinegar
A bit of Ground Salt and Pepper

Ingredients for the Crayfish and coating:
200 gr. / 7 oz Small Crayfish meat, already cooked (cleaned)
0.45 cup / 110 ml Pilsner (Lager) Beer (and a bit of water-50 ml, if needed)
2/3 cup / 80 gr. / 2.8 oz All-purpose Flour
Ground Salt and Pepper
1 tbsp. / 15 ml Olive Oil
1/2 tsp. Paprika powder
2 cups / 500 ml Vegetable Oil for frying
