These Greek Donuts are called Loukoumades and are a special dessert, intertwined with beloved, childhood memories from our summers on the beach.
Because, what is more beautiful than buying a donut right there on the beach from the vendor called Loukoumatzis, eating it under the hot sun, getting covered from top to bottom with sugar, and diving in the cool sea to rinse it!
My recipe today is the lighter version from the normally fried Loukoumades. Dedicated for those who love them, and want to enjoy them but without the guilt. They are eggless and baked in the oven, but still wonderfully fluffy!

Suitable for vegetarians, for vegans and fasting use a milk substitute.

INGREDIENTS:
4 cups / 500 gr / 1 lb 2 oz All-purpose Flour
cup / 60 ml lukewarm Fresh Milk or substitute
1 cup / 250 ml lukewarm Water
1.7 tsp. / 5 gr / 0.18 oz dry Yeast
tsp. Salt
1.5 tbsp. / 20 gr / 0.7 oz Crystal Sugar, for the dough
1 tsp. Vanilla Sugar
30 ml / 2 tbsp. Olive oil
For Garnishing: about 1 cup / 200 gr / 7 oz Crystal sugar (you will need plenty)
