This Salad is an authentic Cretan Summer specialty. It uses small soaked barley rusks (or 1 big),chopped tomatoes,cucumber, crumbled feta, olives, olive oil
& is flavoured w/oregano. It's a slight variety from the renowned Greek Village salad w/the addition of Dakos (i.e.barley rusk). Greek Dakos was created in the older days in order to preserve bread during non-harvest times. Their method was that stale bread was dried for hours in a low-heat oven to become Rusks which could last a year without the need of any preservatives. These teeth-breaker rusks are extremely healthy and great for breakfast with butter and jam and dipped in tea; or in a salad for a full lunch!! In the salad I am preparing, they are being soaked in water first and then drizzled with olive oil, to save you a trip to the dentist!!
