Arnaki Exohiko, meaning lamb country style, is a special dish from the Roumeli region of mainland Greece. This famous Greek dish is usually prepared for the Easter Sunday table especially if you can not prepare lamb on the spit.
Similar to Kleftiko and Gioulbasi but much simpler to prepare, this dish is made with lamb chunks (many times with leftovers), potatoes, vegetables and Greek cheese.
Basically, they are all wrapped together in a parcel and then slowly baked in the oven, resulting in a really succulent meat and ultimate contentment.
I am certain you will enjoy my recipe for this finger-licking, fork tender traditional and celebratory Greek dish!

INGREDIENTS
Ingredients for the Marinade:
1,25 kg. / 3 lb 5 oz Lamb's Leg boneless, in large chunks
50 ml / 3.5 tbsp. Lemon Juice (from 1 large Lemon)
3/4 tbsp. dry Oregano
3 twigs fresh Oregano
1/3 cup / 80 ml Olive Oil
2-3 Garlic cloves, in slices
Ground Salt and Pepper

Ingredients for preparing Exohiko:
The marinated Lamb
1 kg. / 2.25 lb Potatoes, in thin rounds (suitable for baking)
250 gr. / 9 oz Mix of green, yellow, red Peppers (capsicum), cubed (about 1/2 from each color)
75 gr. / 2.75 oz Baby Carrots, thin rounds
100 gr. / 3.5 oz Celery, thin rounds
1 large, sweet Onion, in large cubes
5 twigs fresh Oregano
160 gr. / 5.6 oz Githino Cheese from Naxos or Kefalotyri or Kefalograviera, cut in thick slices, like matchboxes (altern: Manchego or Pecorino)
Ground Salt and Pepper
