Roasted Leg of Pork is an easy, unmissable, scrumptious dish usually prepared in Greece on special occasions, like Christmas or New Year.
My best 3 suggestions to prepare it are:
1. To marinade the pork leg the day before
2. If you have, to use a clay pot (called yastra).
3. To give plenty of time for the pork and potatoes to slowly roast in the oven.
The result: A succulent, fork-tender pork, loukoumi as we say in Greek with all the cherished aromas of the Holiday Season to whet your appetite (as if we didn't have it already )!
Let me show you how to prepare it with all its secrets.

INGREDIENTS
Ingredients for marinating the meat:
1.1 kg. / 2 lb 7 oz Pork Leg without bone
3 tbsp. / 45 ml Olive Oil
2 tbsp. / 30 ml Mustard, yellow
2 tbsp. / 30 ml Greek Pine Honey
2 Garlic Cloves
0.4 cup / 100 ml White Wine

Rest of ingredients:
The marinated pork
1.5 kg / 3 lb 5 oz Round, baby Potatoes, suitable for oven
5-6 twigs Fresh Thyme
1 cup / 250 ml Fresh Orange Juice
1.5 tbsp. / 20 ml / Juice of 1 Lemon
1 tsp. smoked Paprika
1 tsp. dry Oregano
3 tbsp. / 45 ml Olive Oil
Ground Salt and Pepper
