This recipe is dedicated to those who love Greek Spetzofai.
For those who don't know, Spetzofai or Spetsofai is a rustic spicy Greek dish made with country sausages & peppers in a thick tomato sauce. A specialty of Pelion (region of Thessaly) and a very hearty and nourishing dish for the cold winter.
In this recipe, Spetzofai is beautifully wrapped in short crust pastry, creating a pie that can stand as a whole meal by itself or as your centerpiece at any special celebration, all year round!
Time to show you how to prepare this extraordinary pie, where I am redefining a classic Greek dish to new levels of palatal delightfulness!

INGREDIENTS
Ingredients for the homemade short crust Pastry:
400 gr. / 14 oz / 3.2 cups All-purpose Flour
250 gr. / 9 oz Butter (or Margarine) soft, at room temp.
1 tsp. Baking powder
1 large Egg at room temp.
1 small Egg for glazing
A bit of extra flour for rolling the dough
tsp. Ground Salt and Ground Pepper

Ingredients for the sausage filling:
About 250 gr. / 9 oz / 1 large Greek, country Sausage, finely sliced
250 gr. / 9 oz Pork Pancetta, finely chopped
125 gr. / 4.4 oz Mushrooms, finely chopped
2 large Onions, finely chopped
1 green Pepper (capsicum), cubed
1 Florina Pepper, cut in strips (sweet smoked red pepper)
1 Garlic clove, minced
1 pinch Boukovo i.e. chili flakes
1 tsp. ground All-spice (bahari)
1 tbsp. / 15 ml Balsamic Vinegar
3 tbsp. / 45 ml Olive oil
1.5 tbsp. / 20 ml Tomato Paste (puree)
1/2 bunch fresh Parsley, finely chopped
Ground Salt and pepper
