Serves 4-5 personGemista are a favourite Greek dish. The word means stuffed vegetables and there is a great variety of them all over Greece. Of course, they are at their best in the Summer because tomatoes, eggplants and courgettes are sweet and full with flavour having ripened under the Greek sun.
In this alternative recipe, I am using rice as well as bulgur and herbs and vegetables in the stuffing for extra taste. The resulted Gemista melt in your mouth and are simply irresistible. Ideal for the whole family, a healthy and delish meal!
Suitable for vegans and fasting.INGREDIENTS:
Ingredients for the vegetables: 3 large or 6 medium-large ripe Tomatoes
1 large Courgette
1 large Eggplant (aubergine)
1 Green Pepper (capsicum)3 large or 5-6 medium Potatoes
2 tsp. Sugar2 tbsp. Bread Crumbs
Ingredients for the Stuffing: cup / 100 gr. / 3.5 oz Parboiled Rice or Carolina. Parboiled=Grainy Gemista, Carolina=Mushy
1/3 cup / 70 gr / 2.5 oz Bulgur
The insides of the vegetables
About 400 ml / 1.6 cups Water2 medium Onions
100 gr / 3.5 oz Carrots
60 gr / 2.1 oz Currants
40-50 gr / 1.4-1.75 oz Pine Nuts
45 ml / 3 tbsp. Tomato paste (puree) bunch fresh Parsley1 bunch fresh Mint (leaves only)
About cup / 125 ml Olive Oil
Ground Salt & Pepper
Optional: 70 gr / 2.5 oz Feta Cheese (or substitute)
