The word means stuffed vegetables and there is a great variety of them all over Greece. Of course, they are at their best in the Summer because tomatoes, eggplants and courgettes are sweet and full with flavour having ripened under the Greek sun. In this alternative recipe, I am using rice as well as bulgur and herbs and vegetables in the stuffing for extra taste. The resulted Gemista melt in your mouth and are simply irresistible. Ideal for the whole family, a healthy and delish meal!
