Nothing says Spring and Summer Season more than the unbelievably tasty, classic Greek Tourlou-Tourlou.
A staple in my family home as I was growing up, my Mom Elsa used to prepare this dish very often when veggies were at their very best, ripening under the hot Greek sun. I guess she had found the secret to make us eat veggies when we were kids, my sister and me, which is not a small feat.
The attraction was also in its funny name "Tourlou-Tourlou" which we kept repeating with my sibling for laughs.
In Greek it means "randomly mixed" and it's literally any available veggies at home (pantry/garden) that are chopped, mixed together and then slowly cooked in a rich tomato sauce.
Simple, low-cost, healthy and extremely delicious. Let me show you how she prepares it.
Suitable for fasting and Vegans.

INGREDIENTS:
380 gr. /13.4 oz / 1 Large (bell) Eggplant, washed
320 gr. / 11.3 oz / 1 Large Zucchini, washed
380 gr. /13.4 oz / 3 medium Potatoes, cut in large cubes
1 large Onion, coarsely chopped
1 Garlic clove, finely chopped
1 large Green Pepper (capsicum), washed, cut in large cubes
1 large Red Pepper (capsicum), washed, cut in large cubes
100 gr. / 3.5 oz Carrots, cut in rounds
350 gr. / 12.3 oz / 1 Large ripe Tomato, washed, cut in cubes
1 tbsp. Tomato Puree (paste)
1 tsp. Sugar
1/2 cup / 125 ml Extra Virgin Olive Oil (EVOO)
1 tsp. dry Oregano
3 Bay leaves
1/2 bunch fresh Parsley
Ground Salt and Pepper
