Serves 6-8 persons as side dish
Everyone loves the Greek Salad called Horiatiki or 'Hwriatiki' i.e. Village. It is a legendary Salad all over the world because its delicious, fresh and healthy!
Inspired by this, I introduce to you my very own Christmas/Festive Wreath Salad. This is a variation to the authentic Horiatiki, by adding some greens to form a wreath.
Very fresh and colourful, it makes the perfect side dish for grilled meat, turkey or chicken and is a terrific centrepiece on your festive table!
Let me show you how to prepare it and awe your guests!
Suitable for lacto vegetarians. Vegans or fasting can use a feta cheese substitute.

INGREDIENTS:
Ingredients for the dressing:
75 ml. / 5 tbsp. / less than 1/3 cup extra virgin Olive Oil (EVOO)
20 ml. / 1.5 tbsp. Red Vinegar
1 tsp. dry Oregano
tsp. Salt
Ground Pepper
Ingredients for the Salad:
The dressing
About 80 gr / 2.8 oz Freshly cut Lettuce leaves or Watercress
3-4 fresh, small, ripe Tomatoes, washed (at room temp.)
3-4 baby Cucumbers, washed
1 small, sweet Onion, cut in thin wedges
fresh, yellow or orange Pepper (capsicum), cut in cubes
10-12 Greek Kalamata Olives, pitted
1.5 tbsp. Capers
70 gr / 2.5 oz Greek Feta Cheese, cubed (or substitute)
To garnish: Rosemary Twigs and Star toothpicks
